Drink Your Greens

One of my favorite yoga instructors can’t end a class without telling us–at least ten times–to eat more leafy greens. I’m not sure why, but it always makes me giggle a little when she says this (which is not the best thing to do when you’re trying to hold an arm balance or a headstand). Maybe because it just sounds so mom-like: “Eat your greens!”

I do love eating some sautéed kale and Swiss chard, but lately I’ve been looking for a way to incorporate these “power foods” in raw form, that is also tasty. (I can’t just eat raw kale – I’ve tried it; can’t do it.)

Today, this beloved instructor deviated from her normal words of wisdom and said something that resonated – She said, “drink your greens.” And suddenly, I was enlightened… Or, as enlightened as I will even be at 8:00 a.m.

I stopped at the market on the way home and grabbed a few things I would need for my breakfast of raw kale smoothie. There were some amazing beautiful strawberries available, so I decided to start there and work with the rest of the fresh ingredients (which ended up being a banana and, of course, kale)!

For those of you thinking, “Eww – I bet that tastes terrible” (Kent, I’m looking at you), trust me, all you taste is the fruit. And the amount of sustained energy this drink provides is absolutely ridiculous. One sip, and I am ready to conquer the world… or at least another Thursday at work.

Here’s what you need for this Strawberry, Banana Kale Smoothie:

2 cups chopped kale
6 large, ripe strawberries (or about 1 cup)
1 large banana
3/4 cup vanilla soy milk (for some extra sweetness and creaminess)
½ cup ice

Blend everything together until smooth and enjoy! Namaste, friends!
